If you’ve ever wondered how Bengal reinvents street food, then Doi Fuchka is the perfect answer. On my latest culinary adventure, I tried this iconic Bengali snack and was instantly swept away by the flavor explosion in every bite. A close cousin of the classic pani puri or golgappa, Doi Fuchka brings a unique, creamy, spicy twist that makes it unforgettable.
These crispy puris were stuffed with boiled and spiced aloo (potato), and then generously topped with chilled dahi (yogurt), namkeen, tangy chutneys, and a sprinkle of garam masala and other aromatic spices. Finally, a splash of khatta pani tied it all together—creating a mouthful that was sweet, tangy, spicy, and refreshing all at once.
